Easy Chicken and Rice Casserole

April 26, 2011 § Leave a comment

  • 1 lb, chicken breast (bone in or out, preference)
  • 2 packages, Lipton Chicken flavored rice mix (regular, mushroom or broccoli)
  • 6 tabs, butter
  • * flour
  • * salt
  • * pepper
  • 4 tbs, oil or bacon drippings

 Preparation

Preheat oven at 350° degrees.  Butter medium casserole dish (9”x12”) with one tab of butter.  Mix two packages of chicken flavored rice mix with required water (or chicken stock for an enhanced homemade flavor) and butter in casserole dish.  Let rice stand while prepping the chicken.  Salt and pepper chicken and dust with flour.  Brown the chicken in hot oil or bacon drippings on medium high skillet on each side.  Do not cook the chicken through.  Place the hot chicken immediately in the rice mix and settle in the dish.  Bake boneless chicken for 25 minutes or bone-in chicken for 30-35 minutes.  Enjoy!
